アグー

14世紀に中国から渡って来たと言われる沖縄の在来黒豚。
琉球在来黒豚アグーとして現代まで残っているのかはわかっていない。
肉質は、コレステロールが外来種の1/4、アミノ酸が豊富でうま味成分のグルタミン酸が多く含まれている。柔らかく、肉の色沢が良い、臭みがなく、あくが出ない。
また、アグーは粗食に耐え、病気に強い。
